Activité anti oxydante des composés phénoliques des fruits des cultivars locaux d’aubergine cultivés à Brazzaville (Congo)

L’aubergine est riche en micronutriments, souvent méconnus par de consommateurs. Le but de l’étude est d’évaluer l’activité anti oxydante des composés phénologiques des fruits d’aubergine. Les fruits de Solanum eathiopicum (C1, C2 et C3) et Solanum macrocarpon (C4) sont récoltés sur les plants fertilisés avec 100 g, 200 g et 300 g de fientes de poulets par poquet. Ces fruits sont séchés, broyés et tamisés pour obtenir une poudre homogène. L’extraction des composés phénoliques est faite à partir des solvants aqueux, éthanolique et hydro-éthanolique.
