Dietetic fiber is a group of foods characterized by their resistance to enzymes in the gastrointestinal tract. Subdivided into two types: water soluble and water insoluble, they are organic compounds that carry bioactive components that are important to human health. These compounds exert effects on several pathologies, mainly intestinal, but also act in diabetes, hypertension, and other metabolic diseases associated with obesity. The objective of this study was to review the main applications of dietetic fibers in human health. A literature review was conducted on papers from the last five years (2016 to 2021) in Scielo, Google Scholar, PubMed, Capes Journals, and Science Research platforms.
