Abstract: 

The Caruru-de-espinho (Amaranthusspinosus) is an edible plant belonging to the genus Amaranthus, and family Amaranthaceae, having high nutritional content, in addition to being the target of phytochemical studies. In view of this, the objective is to evaluate the phytochemical, protein and nutritional content of the spiny caruru (Amaranthusspinosus) harvested in a city in Bico do Papagaio, North of Tocantins, Brazil. This is a descriptive, experimental study. Leaves and seeds of the spiny caruru (Amaranthusspinosus) were collected, the sample was prepared to produce flour, extract and experimental procedures, to verify the presence of flavonoids, saponins, phenolic compounds and tannins, alkaloids, cardiac glycosides, coumarin derivatives, amino acids, carotenoids, terpenoids/steroids, and check the ash, protein, carbohydrate, moisture, digestion, crude fiber and lipid content. After the phytochemical analysis, the presence of flavonoids, foaming saponins, tannins, cardiac glycosides, alkaloids, coumarin derivatives, amino acids, carotenoids, terpenoids/steroids and significant values for carbohydrate, fiber, protein and lipid content were observed. The results obtained are consistent with the literature, the plant only has to add to the scientific community, since it is rich in secondary metabolites and nutritional properties. New research is necessary in different periods, to observe the potentiality of the species according to climate changes and even the soil of a quantitative nature.
