Abstract: 

Dairy Santa Heleine, is a family industry located in the municipality of Dourados MS has the State Inspection Service SIE. It produces several types of cheeses, being also qualified to commercialize Minas Frescal cheese and its production is commercialized throughout the state of Mato Grosso do Sul. It is common to find their products on the refrigerated shelves of several supermarkets in the municipality of Naviraí MS. The dairy processed in 2020 and 2021 1,642,500 and 1,800,000 liters of fresh milk respectively, observing an increase in production in 2021 of 8.5%, totaling 152,428kg of various types of cheese produced, and the production of Minas Frescal cheese from Santa Heleine Dairy in 2021 was 47,247 kg, while the production of Minas Frescal cheese in all establishments with the SIE in 2021 was 67,808.90 kg, that is, in 2021 Santa Heleine Dairy produced 69.67% of all Minas Frescal cheese produced in establishments with SIE in Mato Grosso do Sul. A similar situation in the previous year, in 2020 the Santa Heleine dairy produced 62,281kg of Minas Frescal cheese, and all establishments with SIE produced 83,310.43kg, this means that in 2020 the Santa Heleine dairy produced 74.75% of all production of Minas Frescal cheese in all establishments with SIE in the state. Performing an analysis of the results of the microbiological examination reports of Minas Frescal cheese, official and routine analyzes carried out at the Santa Heleine dairy in the years 2020 and 2021 was the objective of this work. The routine microbiological analyzes during the whole period of this study were: Coliforms at 45ºC, Staphylococcus coagulase positive, salmonella and L. monocytogenes (BRASIL, 2001) the reports of 120 analyzes were analyzed and of these, only 1 analysis, that is, 0, 83% resulted in not conform and conform, and 99.17% IN COMPLIANCE, that is, in 120 official routine exams, only 1 result was in disagreement with the legislation. Which shows the result of a project and determination to produce a product with the most rigorous quality control, and that the product that is being consumed in the municipality of Naviraí by the citizens and also in other municipalities in the state, is in accordance with the norms current sanitary facilities. Allowing the consumer to have access to an innocuous product, free of pathogens, safe, free from causing food poisoning, thus ensuring the health of the population.
